Ye Sheng Purple — Spring 2025

Harvested in spring from wild-growing purple-leaf tea trees in Jinggu, Yunnan, Ye Sheng Purple is processed in the style of a Moonlight White. The freshly picked leaves are briefly withered before being slowly air-dried, preserving the distinctive fruit and herbal aromatics of the leaf while allowing a little natural bitterness to remain.

The aroma is immediately striking, with dried apricot and ripe stone fruit noticeable before the tea is even brewed. In the cup, white peach and sugarcane bring a soft sweetness, followed by sage, green almond, and a gentle herbaceous edge. A slight bitterness gives the tea structure, while the liquor remains silky and full with a cooling finish that lingers between steeps.

Fruit-forward and unusual for a white tea, with enough savoury and herbal character underneath to keep it balanced. It develops gradually over multiple infusions, moving from bright stone fruit towards a softer, more rounded and cooling finish.

Tastes like
Dried apricot, sugarcane, white peach (Top);
Sage, green almond, cooling herbs (Base);

Brewing
5g tea / 100ml water / 85–90°C
Steep for 30–60 sec. Re-steep several times. The leaves are forgiving to brew, with shorter infusions emphasising the fruit and longer steeps bringing out more of the herbal character and gentle bitterness.

In the cup
Ye Sheng Purple has a bright, lively character with a noticeably full texture for a white tea. The combination of fruit, gentle bitterness, and cooling finish makes it feel refreshing while still having plenty of depth.

A good choice for a slower session, particularly if you want something more expressive than a delicate, traditional white tea.

How to brew
Gongfu Style 5g : 100ml

Our favourite way to brew tea. Use a gaiwan or small teapot and steep the leaves for around 30-45 seconds. Re-steep several times, adjusting the time as you go. Each infusion will bring out something slightly different from the leaves.

Western Style 1g : 100ml

For a larger pot or a single longer brew, use around 1g of tea per 100ml of water. Steep for 3-5 minutes, then strain. Increase the leaf or brewing time if you prefer a stronger cup.

Grandpa Style 1g : 100ml

The simplest way to brew. Add the leaves directly to your mug, fill with hot water and start drinking once the leaves have opened and begun to settle. When you're around two-thirds of the way through, top up with more hot water and keep going.
